Chilled Honeydew Melon Soup

A great soup for the endless hot summer days coming our way !

4 C honeydew melon, cut into chunks
3/4 C coconut milk, regular or light
1-inch piece fresh ginger (or 1 T grated)
Juice of 1-2 limes
1/4 C Madeira wine
Sea salt

In a food processor, combine the melon and ginger and process until smooth. Add the remaining ingredients and adjust for salt. Chill overnight to allow the flavors to meld. Soup can be served the same day, but it will not have quite the mellow flavor as it does the next day. Serves 4-6.
